Ingredients
- 2 oz Gin
- ¾ oz Elderflower Liqueur
- ¾ oz Lemon Juice
- ¼ oz Simple Syrup
- 2 dashes Absinthe
- 1 whole Egg White
Instructions
- Combine gin, St-Germain, lemon juice, simple syrup, absinthe, and egg white in a shaker without ice.
- Dry shake vigorously for 15-20 seconds to emulsify the egg white.
- Add ice to the shaker and shake again until well-chilled.
- Double strain into a chilled coupe glass.
- Garnish with a lemon twist.
